Chef Billy Klein has been cooking up a storm at the popular Cafe Saint-Ex for seven years, but today, we turn the tables and grill the chef.
What’s in your fridge or freezer that would surprise people?
It’s what’s NOT in my fridge…butter.
Last meal you cooked for yourself?
I cook the same breakfast for myself every single day; a five egg white and one yolk omelet with mushrooms.
Last meal on earth?
Either the Tasting Menu at Restaurant Eve or a burger from Five Guys, large fry and large coke.
Which six people — alive or dead — would you choose to attend your ultimate dinner party? What would you serve?
My ultimate dinner party would include my daughter Anais, who will arrive in late November, my wife, my grandmothers, sister and my mother and THEY would cook me! Fried chicken with corn on the cob, mashed potatoes, and gravy.
What non-food-related things do you do for fun?
As a chef, you don’t have too much free time outside of the kitchen. In my down time, I hit the gym and spend time with my wife.
If you could go anywhere on vacation, where would you go?
Hawaii.
What’s on your DVR?
True Blood, Newsroom and Suits.
